Whole Grain French Bread

 

French Bread is great, but trying to be healthier and wanted a recipe that used whole wheat flour. This turned out amazing! The bread machine is used to mix the dough and to let it proof and rise, and it is baked in the oven.
 
1 1/4 cups Water, luke warm
1/2 Tblspn Active Dry Yeast
 1 Tblspn Sugar
1/2 Tblspn Salt
1/2 Tblspn Butter
1.5 cups Whole Wheat Flour (white whole wheat prerferred, but regular works too)
1 cup Bread Flour
1 Egg, beaten (to coat prior to putting in the oven)
 
 Directions:

1) Combine water, sugar and yeast in bread machine bowl and let sit for 5 minutes to activate the yeast

2) Add salt, butter and both flours to bread machine bowl.

3) Use the dough setting on the bread maker and let it run (should take about 1.5 hours). When done, remove dough and if doubling the recipe, cut in half to form two loaves.

4) Using youru hands, flatten the dough for a loaf, forming a rerctangle; Roll the dough up length-wise and fold the end seams under the loaf.

5) Place dough on a parchment lined baking sheet (seam side down), cut 4-5 slits (1/2" deep) into the top of the loaf and brush the egg onto all exposed portions of the loaf.

6) Bake at 170 for 15 minutes; keeping the loaf in the oven, raise temp to 400 and bake an additional 15-20 minutes (golden color); turn down to 350 and bake for 10 more minutes. Cool on wire rack and enjoy!

 

 
 Notes:

Depending on the size of the bread maker, recipe can be doubled. The above is for a 1lb loaf bread machine.
