Jelly roll (Rulltorta)

 

A family recipe, great for desserts or just a snack.
 
 3 eggs
3/4 cup Sugar
1 cup Flour (less 2 Tblspn)
1 tsp Baking Powder
2 Tblspn Sugar, Coarse
1 small can Jam - Strawberry, Blueberry, Blackberry, etc
 
 Directions:

Beat eggs with sugar until very fluffy. Mix flour with baking powder and blend into the egg mixture.

Cover baking sheet with wax paper and spread mixture over it. Bake at 400 for 4-5 minutes.

Cool slightly. Spread coarse sugar over wax paper on the counter. Tip baking pan over the new wax paper and use a wet towel on top of old wax paper to remove it. Thin layer of jam over the entire layer and then roll into jelly roll.
