Lingonberry Jam Cake

 

Fantastic loaf-style cake. Very good flavor!
 
 1/2 cup Butter, unsalted, room temp
1 cup Sugar
2 eggs
1.5 cup Flour
1 tsp Cardamom, ground
1/2 tsp Cinnamon, ground
1/2 tsp Ginger, ground
1 tsp Baking Powder
1/4 tsp Baking Soda
1/2 cup Sour Cream
1/2 cup Lingonberry Jam or Whole Cranberry Jelly
 
 Directions: In a large mixing bowl mix the butter, sugar and eggs until light and fluffy. In another bowl mix dry ingredients (flour, caradmom, cinnamon, ginger, baking power, baking soda and salt). In a third bowl mix sour cream and jam (or jelly). Blend the three bowls together and mix until smooth. Place into a 9x5 loaf pan that has been greased and flour'd, and bake at 350 for 55-60 minutes, until a wooden skewer comes out clean. Cool for 5 minutes, then remove to wire rack to finish cooling.
