Au Gratin Potatoes

 

Cheesy goodness that is easy to make
 
5-6 Medium Potatoes (Russett, Red, Golden, etc)
3 Tblspn Butter
3 Tblspn Flour
1.5 tsp Salt
1/8 tsp Pepper 
2 cups Milk (whole milk preferred)
1 cup Cheddar Cheese, shredded (Cheddar/Jack mimx also works)
1/2 cup Onion, chopped
 
 Directions:

1) Wash or Peel Potatoes and slice thinly

2) In large saucepan create a rous (melt butter over low heat, add flour, salt and pepper and stir until completely combined)

3) Gradually add milk and bring to a boil

4) Cook for 2 more minutes (or until a bit thickened), remove from heat and stir in cheese until melted.

5) Pour into a 2 qt casserole dish, cover and bake at 350 for 1 hour, uncover and bake for for an additional 30-40 minutes (until potatoes are tender).
