| Simple and tasty breakfast potatoes | |
| 2-2.5 lbs | Potatoes (Russet, Gold, Red, etc) |
| 2 Tblspn | Olive Oil |
| 1 tsp | Garlic Powder |
| 1/2 tsp | Salt |
| 1/2 tsp | Pepper (more or less to taste - could also include some cayenne to add some more heat) |
| 1/2 tsp | Smoked Paprika |
| Directions: |
1) Wash or peel potatoes and cut into small cubes, about 1/2" or slightly smaller. Coat potatoes with olive oil. 2) In a seperate bowl, mix garlic powder, salt, pepper and paprika. Mix dry ingredients with potatoes. 3) Grease baking sheet and add potatoes in a single layer on the baking sheet. 4) Bake in preheated over at 425 for 20 minutes, increase heat to 475 and cook an additional 15-20 minutes until golden brown / crispy. |

1) Regular paprika will work as well, but smoked paprika adds a nice smokey flavor 2) Mix leftovers with ham, grilled onions, bacon, eggs, cheese and salsa to make a delicious breakfast hash! |
